Brunch is my fave meal of the day, and it can be a great opportunity to incorporate healthy and nutritious foods into your diet. Here are some healthy brunch ideas to try:
- Avocado toast with eggs: My personal fave, avocado toast is a tasty and nutritious option for brunch. I love to top sourdough toast with mashed avocado, a fried or poached egg, and a sprinkle of salt & pepper for added flavour and nutrients.
- Greek yogurt parfait with berries and granola: Greek yogurt is a good source of protein, calcium, and probiotics, making it a healthy option for breakfast or brunch. Layer it with fresh berries and a sprinkle of granola for added flavour and crunch.
- Egg and vegetable frittata: Frittatas are a versatile and satisfying option for brunch. Mix together eggs, a variety of vegetables, and cheese, and bake in the oven until set. Serve with a side of whole grain toast or a mixed green salad for a complete meal.
- Quinoa and vegetable bowls: Quinoa is a protein-rich grain that is a great option for brunch. Cook quinoa and mix it with a variety of vegetables, such as roasted sweet potatoes, sautéed spinach, and cherry tomatoes. Top with a fried or poached egg and a drizzle of vinaigrette for added flavour and nutrients.
- Smoothie bowls: Smoothie bowls are a delicious and convenient option for brunch. Blend together a mix of frozen fruits, vegetables, and protein-rich ingredients, such as yogurt or milk, and pour into a bowl. Top with a variety of toppings, such as granola, nuts, and fruit, for added flavour and nutrition.
